Vegetable Pulao



I make this Veg Pulao whenever I feel like cooking something simple as a meal. This goes well with any rich gravy like Paneer Butter Masala or Raitha kind of side dishes.This makes a great lunch box recipe too. I knew many of you guys know how to make this recipe but still then I would like to publish this article in my blog. I am sure it might be helpful for the beginners in cooking.

Vegetable pulao
 Ingredients: Serve-2
  • Basmati rice – 1 glass
  • Chopped mixed vegetables – 1 cup (carrot-1small, beans-8, peas - few)
  • Onion – 1
  • Green chili – 3
  • Water – 1 & ½ glass (used for measuring rice)
  • Salt - 1tspn (adjust to taste)
  • Ghee – 1tspn
  • Ginger-garlic paste – 1tspn
  • Oil – 2tspn
  • Cinnamon – 1 small inch
  • Cardamom - 2
  • Cloves - 2
  • Bay leaf – 1

Method:
  1. Soak Basmati rice for at least an hour. Cut the vegetables like small pieces, wash and keep aside.
  2. Heat oil in a  pressure cooker add cloves, cinnamon, bay leaf, cardamom and wait for crackle.(figure 1)
  3. Add onion which was cut length-wise and salt, fry till onion become transparent in medium flame.(figure 2)
  4. Add ginger garlic paste, green chillies and saute for a minute.(figure 3 & 4)
  5. Add the vegetables and saute for 2 more minutes.(figure  5)
  6. Now add the rice drained from water and mix well. (figure 6)
  7. Add 1 & 1/2 glass of water mix well and taste the water. If you feel like the taste is not as expected then add necessary ingredients to suit your taste and mix well.(figure 7)
  8. Close the pressure cooker and keep the flame in slim and cook for 12 – 15 minute without putting weight to cooker (or) you can also keep for 2 whistles in medium flame by putting weight on cooker.(figure 8)
  9. Open the cooker slowly and add 1tspn ghee.(figure 9) 
    Veg Pulao is ready to serve !
 Additional Tips:-
  • By soaking the rice for more than an hour, rice will get cooked very soft and comes as separate grains.
  • Fry in medium flame to avoid burning of any ingredient which will make your pulav look dull in color.
  • Once cooking is completed in pressure cooker don't open the lid immediately, just wait for the cooker to get cool down and then proceed opening the lid.
