Egg Rice


Egg contains vitamin B2 which helps our body to break down food into energy, boost weight loss and increase memory power.Like this we have so many advantages if we eat egg every day,mostly preferred as part of our breakfast. Now lets see the preparation process for egg rice which can be prepared very easy and quickly. Preferred option for lunch box too. 

Egg Rice
Ingredients: Serve-1
  • Eggs- 2 
  • Onion – 1 
  • Cooked rice – 1 cup 
  • Green chili – 2
  • Curry leaf – few 
  • coriander leaves – few 
  • Pepper powder – 2tspn 
  • Turmeric powder – a pinch 
  • Mustard seeds  - 1tspn 
  • Urad dhal – 1tspn 
  • Salt - 1spn (adjust to taste)

Method:
  1. First cook the rice, keep aside in a plate and let it cool.(figure 1)
  2. Take a pan heat oil in a medium flame add mustard seeds, urad dhal wait for crackle then add curry leafs, green chillies(cut length-wise), onion,salt and  saute for few min.(figure 2 & 3) 
  3. Next add turmeric powder, 1 spoon pepper powder and saute for few more min (figure 4 & 5) 
  4. Add eggs, mix finely and saute for few seconds. Ensure egg is cooked just half boiled (figure 6 &7) 
  5. Now add cooked rice, mix well and then add one more spoon pepper powder and mix well (figure 8) 
  6. Finally switch off the flame and garnish with coriander leaves.(figure 9)
Additional Tips:
  • After adding eggs to the mixture stir continuously until curry cooks well as shown in figure 7.
  • Add cool rice to the egg mixture and mix smoothly not roughly
  • Don't add hot rice to the egg mixture.
