Kesari
Kesari is a popular South Indian sweet that is made of Rava. Kesari is one of the easiest sweets recipe which can be prepared in just 15 minutes. We usually make kesari for special occasions like birthday / anniversary.

Ingredients: Serve- 4
- Upma Rava - 1glass
- water - 3 glass (use the rava measured glass)
- Ghee- 1/2 cup
- kaju - 10
- kishmish - 10
- Cardamom- 2
- food color - 2 drops
- sugar - 1 glass ( use the rava measured glass)

Method:
- Take a pan, heat 2tspn ghee in medium flame, roast 1 glass rava until color changes slightly brownish and immediately shift to a plate, keep aside.(figure 1 & 2)
- Take a pan, heat water and add sugar, food color, cardamom. Boil the water until bubbles come (figure 3, 4 & 5)
- Now add roasted rava and mix well. Close the lid and cook for 5min. After 5mins open the lid, check whether water is completely observed by rava if not then again close the lid and cook few more minutes until water is completely observed.(figure 6 & 7)
- Mean while take pan, heat remaining ghee and roast the nuts in golden color (figure 8)
- After rava is cooked, add roasted nuts along with ghee and mix well.(figure 9)
- That's it, hot and sweet Kesari is ready to serve ! (figure 10)
Additional Tips:-

Roast the rava until its color changes slightly brownish and immediately shift to a plate. If you keep the rava in same pan then due to the pan heat, rava color gets changes. This will spoil the taste of our kesari.
- In step 3 mix the rava well without any lumps.
