Peas Mint Rice

Mint leaves has many healthy benefits such as cooling the digestive system,boosting immunity, help to overcome cough and many more. So guys please ensure you take mint leaves atleast once a week. Today we are going to see how to prepare peas mint rice. Preferred option for lunch box.  
Peas Mint Rice
Ingredients: Serve-2
  • Rice – 1 glass
  • Water – 1 & 3/4 glass
  • Oil – 2tspn
  • Onion – ( Medium size)
  • Green chilies- 4
  • Ginger-garlic paste -1tspn
  • Curry leaves- Few
  • Mint leaves – 2 cups
  • Peas – 1 cup
  • Jeera – ½tspn
  • Mustard seeds – 1tspn
  • Urad dhal – 1tspn
  • Salt - 1spn (adjust to taste)

 Method:
  1. Soak the rice in water for 15min.
  2. Take pressure cooker, heat 2tspn oil in medium flame, add mustard seeds wait for crackle and then add urad dhal, jeera, curry leaves,chopped (length-wise) green chilies. Saute for 2 seconds.(figure 1)
  3. Add chopped (length-wise) onions, salt, ginger-garlic paste and saute until onions become soft.(figure 2 & 3)
  4. Add mint leaves, saute for 2 more minute and then add peas. Continue saute for 1 more minute (figure 4 & 5)
  5. Now add rice and saute for 2 minute (figure 6)
  6. Add water and mix well. Close the lid with weight, cook for 3 vessels in medium flame(figure 7 & 8)
  7. Open the cooker slowly and serve in plate (figure 9).
Peas Mint Rice is ready to serve hot !
 
Additional Tips:-
  •   Saute the mint leaves for at least 1 minute then only rice will get good flavor.
