Lemon Rice


Lemon rice with combination of potato fry will be fantastic and it makes a great lunch box recipe too.. Lemon rice is also made during  many festivals like Ganesh Chaturti, Dasara, etc. and also we find in Indian temples, it will be very tasty. So I decided to do lemon rice at home and i got good taste. Here is the recipe for this tasty and yummy rice. 
Lemon Rice
Ingredients:Serve - 2 
  • Rice  -  2 cup cooked
  • Lemon – 2 (small size)
  • Oil- 4tspn
  • Peanuts – 3tspn
  • Mustard seeds – ½tspn
  • Black gram – ½tspn
  • Channa dhal – 1tspn
  • Curry leafs- a few
  • Green chili – 4
  • Turmeric powder –  a pinch
  • Asafetida – a pinch
  • Salt – 3/4tspn (adjust to taste)

Method:

  1. Take Lemon juice in bowl and  add salt keep this mixture aside.(figure 1 & 2)
  2. Take pan heat oil in medium flame  add mustard seeds after it crackle add black gram, peanuts saute well.(figure 3)
  3. Add channa dhal , curry leaf, green chili (cut length-wise), turmeric powder and Asafoetida saute for few seconds.(figure 4,5 &6)
  4. Add  lemon mixture cook 2min and switch off the stove(figure 7)
  5. Now add this mixture to the cooked rice and mix well(figure 8)
  6. Lemon rice is ready to serve. (figure 9)
Additional Tips:-
  • After cooking the rice, serve the rice in big  plate and let it cool then add lemon mixture
  • Don't add lemon mixture in hot rice, rice will become thick it will not be loose.
