Carrot Rice


Carrot contains Vitamin A, which is good for eye sight and prevent cancer. Regular consumption of carrots reduce cholesterol level which helps prevent heart related problems. When we eat Carrot after meals it will clean our teeth, they act as natural abrasives that help in eliminating dirt and plague from the teeth.

Today let us learn how to make this simple carrot rice following our easy recipe.
Carrot Rice
Ingredients: Serve - 2
  • Carrot Grated - 2 (small)
  • Cooked Rice - 2 cups
  • Oil - 3 tspn
  • Mustared seeds - 1/2tspn
  • Urad dhal - 1/2 tspn
  • Channa dhal - 1tspn
  • Kaju - 4
  • Curry leaves - as required
  • Coriander leaves - as required
  • Turmeric powder - a pinch
  • Red chilly - 2
  • Salt - 1tspn (adjust to taste)

Method:
  1. First remove skin of the carrot and grate it.
  2. Take a pan, heat oil add mustared seeds and wait for crackle and then add urad dhal, channa dhal, red chillies, kaju, curry leafs, saute for 1minute.(figure 1 & 2)
  3. Add grated carrot and continue sauting for 1 more minute and then add turmeric powder, salt, saute for  2  more seconds.(figure 3, 4, & 5)
  4. Close with lid and cook for 10minutes in a medium flame or else cook until carrot gets cooked.(figure 6)
  5. Now add cooked rice and mix softly, saute for 1minute.(figure 7)
  6. Garnish with coriander leaves. (figure 8)
Carrot Rice is ready to serve !

Additional Tips:-
  • In step5, add cool rice and mix softly.
