Peanuts Ladoo

Today's recipe is my favorite snacks since childhood. Yes its non other than Peanuts Ladoo. It is a delicious Indian recipe and easy snack much enjoyed by kids. Jaggery being rich in iron and peanuts is an excellent source of proteins to fill the calories that kids loose all the time.

Peanuts ladoo
 Ingredients: Serve - 4
  • Peanuts – 2 cup
  • Jaggery powder – 1/2 cup
  • Water -  1/4 cup
  • Cardamom powder – 1tspn

Method:
  1. Take a pan, roast the peanuts, remove the skin and cut the peanuts as half pieces.(figure 1 & 2)
  2. Take big pan heat water in medium flame. Add jaggery powder and stir continuously.(figure 3 & 4)
  3. After jaggery is melt completely remove dust with filter. (figure 5 & 6)
  4. Now again heat the pan add jaggery juice and stir continuously until it gets thick. Ensure that if you drop some juice in water & combine that juice together then it should get as ball.(figure 7, 8 & 9)
  5. Now immediately switch off the stove, remove the pan from stove. Add cardamom powder, peanuts and mix well.(figure 10 & 11)
  6. When it is hot prepare small balls using hands. Apply oil to your hands so that jaggery is not sticking to hands.
  7. Serve in plate and let it cool down for 1 hour.(figure 12)
Peanuts Ladoo is ready to serve !

Additional Tips:-
  • In step 4, get good consistency then only ladoo's will come good.

Taro Curry

Taro curry is an Indian food recipe were taro is cooked along with tamarind juice and some spices. Taro is also known as chamagadda in telugu, Arbi in Hindi. Chamagadda pulusu is a very famous traditional dish in Andhra Pradesh. Today let’s see how to prepare the Taro curry.

Taro Curry

Ingredients: Serve - 4
  • Taro  - 1/2 kg
  • Oil – 8tspn
  • Mustard seeds - 1tspn
  • Urad dhal -1tspn
  • Cumin seeds – 1/2tspn
  • Garlic pieces - 5
  • Curry leafs -as required
  • Coriander leaves - as required
  • Onion- 1 (large size)
  • Tomato- 2 (small size)
  • Tamarind Juice - 4glass
  • Turmeric powder- 1/2tspn
  • Red chili powder - 4tspn (adjust to taste)
  • Salt - 3tspn(adjust to taste)

Method:
  1. Remove the Taro skin & cut it as medium size pieces. Wash with water cleanly without having any dust.
  2. Take 2 glass of tamarind juice in a bowl ensure that juice should be little thick as shown in the figure.(figure 1)
  3. In tamarind juice smash 1 tomato with hand and then add turmeric powder, red chili powder &  salt. Taste the juice, if you feel like the taste is not as expected then add necessary ingredients to suit your taste and mix well. (figure 2 & 3) 
  4. Now take a big pan, heat oil in medium flame add mustered seeds wait for crackle then add urad dhal, cumin seeds, garlic pieces,few curry leaves and saute for 1 minute.
  5. Add onion and saute until onions become soft. (figure 4)
  6. Add tomato and saute until tomatoes are smashed. (figure 5)
  7. Add taro pieces and saute for 5 minutes. (figure 6)
  8. Now add Tamarind juice which is prepared in step 3 and mix well. Close with lid and cook until taro gets cooked well. It’s take the time around 10- 15 minutes. (figure 7 & 8)
  9. Garnish with coriander leaves and serve in bowl. (figure 9)
Awesome Taro Curry is ready to serve!

Additional Tips:-

  • In step7, saute the taro for 5 minutes then it will cook soon. 

Coconut Milk Rice



Coconuts have many healthy benefits like improving our immune system by acting as an anti-viral, anti-bacterial. It improves digestion and absorption of nutrients, vitamins & minerals. So friends please ensure any coconut-derived ingredients like coconut water, milk, flour, oil is present in your diet chart.

Today lets see how to make coconut milk rice. Its very simple and easy main course recipe.

Coconut Milk Rice
Ingredients: Serve - 2
  • Rice – 1 glass
  • Oil – 2spn
  • Bay leaf – 1
  • Cinnamon – 1 small inch
  • Cloves – 3
  • Fennel seeds – ½spn
  • Garlic – 6 pieces
  • Green chilies – 3 (cut as length wise)
  • Onion – 1 (big)
  • Coconut milk – 2 glass (which has measured for rice)
  • Salt - 1tspn (adjust to taste)

Method:
  1. Wash and  soak rice for 20 minutes.
  2. Take a cooker, heat oil in medium flame add bay leaf, cinnamon, cloves, fennel seeds and saute for 1 minute. (figure 1)
  3. Add green chilies, garlic, onions, salt and saute until onion become soft.(figure 2 & 3)
  4. Next add coconut milk and cook until milk gets boil by closing with lid. (figure 4 & 5)
  5. After milk getting boiled, add rice and mix well.  Close the pressure cooker with weight and cook for 3 whistles in medium flame. (figure 6,7 & 8)
  6. Serve in plate. (figure 9)
Additional Tips:-
  • In step3 , don't fry the onions deep or else Coconut milk rice color changes.
  • In step 4, to prepare coconut milk take 1 full coconut, cut into pieces and grind them in mixer softly by adding 2 glass of water and then filter the mixture in a bowl.
  • While preparing coconut milk, first add 1 glass of water along with coconut pieces, grind them and filter it. Then once again grind the mixture with another glass of water, filter it.

Veg Fried Rice



Hope Vegetable Fried Rice doesn't need much introduction so lets directly jump into the preparation process. 
Veg Fried Rice
Ingredients: Serve- 2
  • Basmati Rice – 2 cup (cooked rice)
  • Oil – 3tspn
  • Cumin seeds – ½tspn
  • Onion – 1(big)
  • Carrot – 1(small)
  • Beans – 8
  • Peas –as required
  • Pepper powder – 1tspn
  • Green chilly – 2
  • Coriander leaves - as required
  • Salt - 1tspn (adjust to taste)

Method:
  1. Cook the rice and transfer into plate. keep aside and let it cool.(figure 1)
  2. Take a pan, heat oil in medium flame add cumin seeds wait for crackle. Then add thin slices onion and saute for 5 minutes.(figure 2 & 3)
  3. Add green chillies, vegetables and saute for 1 more minute. (figure 4)
  4. Add salt, pepper powder and continue sauteing for 1 minute.(figure 5 & 6)
  5. Close the pan with lid and cook for 5 minutes in a medium flame.(figure 7)
  6. Open the lid, add cooked rice and mix well. (figure 8)
  7. Finally garnish with chopped coriander leaves and serve in bowl.(figure 9)
 Veg Fried Rice is ready to serve !

Additional Tips:- 
  • Cut the vegetables in small pieces so that it will get cooked faster.
