Coconut Milk Rice
Coconuts have many healthy benefits like improving our immune system by acting as an anti-viral, anti-bacterial. It improves digestion and absorption of nutrients, vitamins & minerals. So friends please ensure any coconut-derived ingredients like coconut water, milk, flour, oil is present in your diet chart.
Today lets see how to make coconut milk rice. Its very simple and easy main course recipe.

Coconut Milk Rice |
Ingredients: Serve - 2
- Rice – 1 glass
- Oil – 2spn
- Bay leaf – 1
- Cinnamon – 1 small inch
- Cloves – 3
- Fennel seeds – ½spn
- Garlic – 6 pieces
- Green chilies – 3 (cut as length wise)
- Onion – 1 (big)
- Coconut milk – 2 glass (which has measured for rice)
- Salt - 1tspn (adjust to taste)

Method:
- Wash and soak rice for 20 minutes.
- Take a cooker, heat oil in medium flame add bay leaf, cinnamon, cloves, fennel seeds and saute for 1 minute. (figure 1)
- Add green chilies, garlic, onions, salt and saute until onion become soft.(figure 2 & 3)
- Next add coconut milk and cook until milk gets boil by closing with lid. (figure 4 & 5)
- After milk getting boiled, add rice and mix well. Close the pressure cooker with weight and cook for 3 whistles in medium flame. (figure 6,7 & 8)
- Serve in plate. (figure 9)
Additional Tips:-
- In step3 , don't fry the onions deep or else Coconut milk rice color changes.
- In step 4, to prepare coconut milk take 1 full coconut, cut into pieces and grind them in mixer softly by adding 2 glass of water and then filter the mixture in a bowl.
- While preparing coconut milk, first add 1 glass of water along with coconut pieces, grind them and filter it. Then once again grind the mixture with another glass of water, filter it.
