Finger Millet Roti

Finger millet roti is a very famous south India recipe. Generally millet are high in fiber, protein, phosphorus and they help us to control blood sugar as well. Finger millet has highest calcium (344mg) content among all the food grains. In wheat and rice calcium content is less than 50 mg so just imagine the amount of energy you get by eating Finger millet.
 

Today lets see the steps involved in making finger millet roti. This recipe is also known as ragi adai in tamil, ragi roti in telugu. It's a healthy breakfast/dinner for diabetic and for people who wants to lose their weight. There are two versions of roti one is sweeter and other is spicy version. Now we are going to see the spicy version.
Finger Millet Roti


Ingredients: Serve -2
  • Ragi flour / finger millet flour – 1 cup
  • Onion – 1 (big size)
  • Green chilly – 3
  • Curry leaves – as required
  • Coriander leaves – as required
  • Salt – 1/2tspn (adjust to taste)
  • Oil – required for roti
  • Water – as required

Method:
  1. Take mixing bowl, add ragi flour, salt, onion pieces, green chilly pieces, chopped curry-coriander leaves and mix them well. (figure 1 & 2)
  2. Add required water and make a dough.
  3. Add 1tspn oil, mix well and make small equal balls.(figure 3 & 4)
  4. Heat a pan in a medium flame.
  5. Now take a cover, apply oil to the cover.
  6. Take one ragi ball and make roti by spreading with hand (figure 5 & 6)
  7. Shift the roti to the pan and cook both sides by applying oil in a medium flame. (figure 7 & 8)
  8. Repeat the same process for remaining ragi balls.
  9. Serve in a plate. (figure 9)

Finger Millet Roti is ready to serve !

Additional Tips:-
  • In step2, make dough as little tight not smooth. For this dough we need only little water.
  • In step 6, make roti as medium thick and not very thin
  • In step7, take care while shifting roti to pan otherwise roti will broken. Cook roti in only medium flame otherwise roti wouldn't cook well.

Spicy Shells

Spicy shells is an delicious snack recipe make using all purpose flour. These shells can be made in two varieties sweet and hot. Today lets see the spicy version making process.


Spicy Shells

Ingredients: Serve - 4
  • All purpose flour – 2 cups
  • Rice flour – 2tspn
  • Hing powder -  1/4tspn
  • Ghee / Dalda – ½ cup
  • Salt – 1/2tspn (adjust to taste)
  • Red chilly powder – 1tspn
  • Water – as required
  • Oil –  for deep frying
  • Shells  Stick

Method:
  1. Take a mixing bowl, add all purpose flour, rice flour, hing powder, salt, red chilly powder and mix well. (figure 1 & 2)
  2. Heat ghee /dalda in a medium flame and add to the powder prepared in above step. Mix well.(figure 3)
  3. Add required water and make a dough.(figure 4 & 5)
  4. Make small balls and do shells with shell stick.(figure 6 & 7)
  5. Heat oil in a medium flame, add shells and roast until its color changes to golden brown. (figure 8)
  6. Continue same process for remaining shells and transfer into paper towel to excess oil.
  7. Serve in a bowl.(figure 9)
Yummy and Spicy Shells are ready to serve !

Additional Tips:-
  • In step 3, make a dough as little soft not very soft.
  • In step 5, while roasting shells be careful some times it might get broken if you saute faster.

Methi Pakoda

Methi Pakoda is a healthy and tasty snack recipe. It is made with methi leaves and gram flour. The steps involved in making this recipe is very straight forward and simple.

Methi Pakoda
Ingredients: Serve - 4
  • Methi leaves -  ½ cup
  • Gram flour – 1 cup
  • Red chilli powder – 1/2tspn
  • Turmeric powder – 1/4tspn
  • Salt – 1/2tspn (adjust to taste)
  • Soda Salt – 1/4tspn
  • Garam masala – 1tspn
  • Cumin seeds – 1/2tspn
  • Green chilli – 1
  • Garlic  - 3 pieces
  • Onion – 1 (small)
  • Spring onions – ¼ cup
  • Water – as required
  • Oil – for deep frying

 Method:
  1. Wash and cut the methi leaves as small pieces.
  2. Take a bowl, add gram flour, salt, soda salt, turmeric powder, red chilli powder, cumin seeds, garam masala, onions, spring onions, green chilli pieces, crashed garlic, methi leaves and mix well. (figure 1 & 2)
  3. Add required water and make a thick paste. (figure 3)
  4. Take a pan, heat oil for deep frying in a medium  flame.(figure 4)
  5. Now take some amount of paste, make a pakoda in oil and fry until its color changes to golden brown.(figure 5)
  6. Continue for remaining pakoda’s and transfer into paper towel for removing excess oil.
  7. Serve in a plate. (figure 6)
Methi Pakoda is ready to serve !

Additional Tips:-

  • In case if you like eating spring onion then can use both onion and its leaves in step 3 instead of normal onion.
  •  In step 3, ensure that paste should be thick or else pakoda will not come.

Rice Flakes Mixture

Rice flakes mixture is a very famous Maharashtra snack recipe. This recipe is made using crispy beaten rice flavored, peanuts and spices. Just try it out, I am sure you will definitely like it.  
Rice Flakes Mixture
Ingredients: Serve - 2
  • Rice flakes – 2 cups
  • Oil – 3tspn
  • Onion – 2
  • Tomato – 1
  • Green chilly – 1
  • Red chilly – 5
  • Cumin seeds – 1/2tspn
  • Salt – 1tspn (adjust to taste)
  • Coriander leaves – as required
  • Curry leaves – as required
  • Mixture -  ½ cup
  • Peanuts – 4tspn

 Method:
  1. Take a pan, heat oil in a medium flame, add rice flakes and roast until its color changes to golden brown. (figure 1)
  2. Take a pan, roast the peanuts until its color changes to brown in a medium flame.(figure 2)
  3. Add roasted peanuts into the rice flakes and saute for 2 minutes. (figure 3)
  4. In a mixer, add red chilies, cumin seeds, salt and make a soft powder. (figure 4,5 & 6)
  5. Chop the onions, tomato, green chili, curry leaves, coriander leaves like small pieces.(figure 7)
  6. Take a big bowl, add roasted rice flakes, roasted peanuts, mixture and mix well. (figure 8)
  7. Add sufficient red chilly powder which has been prepared in step 4.(figure 9)
  8. Add chopped onions, tomato, green chilly, curry leaves, coriander leaves and mix well with hand.(figure 10)
  9. Add lemon and mix well.(figure 11)
  10. Serve in a bowl.(figure 12)
Spicy Rice Flakes Mixture is ready to serve! 

Additional Tips:-
  • In step 6, we can add any type of ready made mixture available in market. It will add more taste to your recipe.
  • In step 8, mix the mixture with hand to ensure all species got mixed well.

Peanuts Ladoo

Today's recipe is my favorite snacks since childhood. Yes its non other than Peanuts Ladoo. It is a delicious Indian recipe and easy snack much enjoyed by kids. Jaggery being rich in iron and peanuts is an excellent source of proteins to fill the calories that kids loose all the time.

Peanuts ladoo
 Ingredients: Serve - 4
  • Peanuts – 2 cup
  • Jaggery powder – 1/2 cup
  • Water -  1/4 cup
  • Cardamom powder – 1tspn

Method:
  1. Take a pan, roast the peanuts, remove the skin and cut the peanuts as half pieces.(figure 1 & 2)
  2. Take big pan heat water in medium flame. Add jaggery powder and stir continuously.(figure 3 & 4)
  3. After jaggery is melt completely remove dust with filter. (figure 5 & 6)
  4. Now again heat the pan add jaggery juice and stir continuously until it gets thick. Ensure that if you drop some juice in water & combine that juice together then it should get as ball.(figure 7, 8 & 9)
  5. Now immediately switch off the stove, remove the pan from stove. Add cardamom powder, peanuts and mix well.(figure 10 & 11)
  6. When it is hot prepare small balls using hands. Apply oil to your hands so that jaggery is not sticking to hands.
  7. Serve in plate and let it cool down for 1 hour.(figure 12)
Peanuts Ladoo is ready to serve !

Additional Tips:-
  • In step 4, get good consistency then only ladoo's will come good.
