Banana Puri

Banana Puri is a popular south Indian sweet recipe made with wheat flour. Banana puri has richness of banana flavour enhanced with cardamom, which makes this sweet recipe more popular among kids. Just try it out and I am sure everyone in your family will definitely enjoy it.

Banana Puri
Ingredients: Serve - 4
  • Banana – 1
  • Sugar – 1/2 cup
  • Wheat flour – 1 cup
  • All purpose flour – 1 cup
  • Ghee – 2tspn
  • Oil – for deep frying
  • Cardamom powder – ½tspn
  • Salt – ¼tspn (adjust to taste)

Method:
  1. Cut the banana. (figure 1)
  2. Smash well with smasher or hand. (figure 2)
  3. Add sugar, ghee, cardamom powder and salt mix well.(figure 3)
  4. Add wheat flour, ¾ cup all purpose flour, 1tspn oil and mix well as soft dough. Keep rest for 1 hours.(figure 4 & 5)
  5. Now make 5 equal big balls.
  6. Take remaining all purpose flour in plate and stuff 1 ball in flour.(figure 6)
  7. Make big chapatti and cut as small round with sharp glass or any cup.(figure 7)
  8. Take slowly small puries and transfer into plate.
  9. Heat oil for deep frying in medium flame, add puries and cook until its color changes in golden brown.(figure 8)
  10. Repeat the same process for remaining puries and transfer into tissue paper for removing excess oil.
  11. Serve in a plate with hot/ cold.(figure 9)
Banana Puri is ready to serve !

Additional Tips:-
  • In step 2, smash the banana well without any lumps.
  • In step 4, rest the dough for at least 1 hour. 

Cauliflower Curry


Cauliflower curry is made with very healthy vegetables like beans, carrot, cauliflower, etc. This is a very good main course recipe for both rice and chapati. Today lets see the process involved in preparing this recipe. 
Cauliflower Curry
 Ingredients: Serve- 4
  • Cauliflower – 1/2 cup
  • Peas – ½ cup
  • Potato – 2 (small)
  • Beans – 5
  • Carrot – 1 (small)
  • Salt - 1 & 1/2tspn (adjust to taste)
  • Turmeric powder – a pinch
  • Red chilly powder – 2tspn
  • Coriander powder – 1tspn
  • Onion – 2 (big)
  • Tomato – 2 (small)
  • Curry leafs – as required
  • Coriander leaves -as required
  • Oil – 6tspn
  • Mustard seeds – ½tspn
  • Urad dhal – 1/2tspn
  • Cinnamon – 2 small inch
  • Cloves -6
  • Fennel seeds – 1tspn 
  • Coconut  - Half
  • Green chillies – 3   
  • Ginger - 1 small piece 
  • Garlic – 7 pieces  
  • Water - 3/4 glass

 Method:
  1. In a mixer jar add 3 cloves, 1 small inch cinnamon, 1/2tpsn fennel seeds, ginger, garlic, coconut, green chillies and make a fine paste. (figure 1 & 2)
  2. Cut all vegetables and keep aside.
  3. Cook cauliflower with pinch of turmeric powder in water for 5 minutes in medium flame. (figure 3)
  4. Take a cooker, heat oil in medium flame add mustard seeds and wait for crackle and then add urad dhal, 3 cloves, 1 cinnamon, 1/2tspn fennel seeds, continue sauteing for 1 minutes. (figure 4)
  5. Add grind paste which has been prepared in step 1, curry leaf, onions and continue sauteing  for 2 more minutes. Then add tomatoes & saute until tomatoes become soft. (figure 5)
  6. Add all vegetables & saute for 1 minute and then add red chilly powder, turmeric powder, salt, coriander powder, continue sauteing for 1 more minute. (figure 6, 7 & 8)
  7. Now add 3/4 glass of water, mix well and taste the water. If you feel like taste is not as expected then add necessary ingredients to suit your taste & mix well. (figure 9)
  8. Close the lid with weight and cook for 3 vessels in medium flame. (figure 10)
  9. Garnish with coriander leaves & cook for 2 more seconds.(figure 11)
  10. Serve in a bowl (figure 12)
Healthy Cauliflower Curry is ready serve !

Additional Tips:-
  • Cook the Cauliflower for at least 5 minutes. So that incase if any insects were present in it, will die while cooking.

Chicken briyani

Hope the post heading speaks louder so, this recipe does not need any formal intro. Chicken Briyani  can be prepared in various style. Today let's see the process involved in preparing via electronic rice cooker.
Chicken Briyani
  Ingredients: Serve - 2
  • Chicken – 1 kg
  • Basmati Rice – 1 & ½ Glass
  • Oil – 6tspn
  • Red Chilli powder – 1tspn
  • Turmeric powder – pinch
  • Coriander powder – 1/2tpsn
  • Everest Briyani masala – 3tspn
  • Salt – 1 & ½tspn (adjust to taste)
  • Lemon – ½
  • Coriander leaves – as required
  • Mint leaves – as required
  • Food Color – 1tspn
  • Curd – 3tspn
  • Ajinamoto – 1/2tspn
  • Bay leaf – 2
  • Cumin seeds – 1/2tspn
  • Fennel seeds – 1/2tspn
  • Ginger- garlic paste – 2tspn
  • Green chili paste – 1tspn
  • Cardamon - 2 
  • Onion - 3 (big size)

Method:
  1. Soak the rice for 1 hour.
  2. Cut the Chicken as big size. Clean well with water and 1/4tspn of turmeric powder.
  3. Take a big bowl add chicken pieces, red chili powder, turmeric powder, salt, coriander powder, briyani masala, ajinamoto, lemon juice, ginger-garlic paste, curd, green chili paste, coriander leaves, mint leaves, 4tspn oil mix well and soak for 1 hour. (figure 1 & 2)
  4. Take a pan, heat 2tspn oil in medium flame add bay leaf, cinnamon, fennel seeds,cardamon and saute for 1 minute. (figure 3)
  5. Now add onion & continue sauteing until onion color changes to golden brown. (figure 4 & 5)
  6. Add soaked chicken & mix well. Close with lid and cook until chicken gets half boiled. Approximately 3-5 minutes(figure 6, 7 & 8 )
  7. After chicken is half cooked switch off stove and transfer into rice cooker.(figure 9 & 10)
  8. Now on top of the chicken add soaked rice, food color, mint leafs, water and close the cooker and cook. (figure 11,12,13 & 14)
  9. Serve in a bowl. (figure 15)
Spicy Chicken Briyani is ready to serve !

Additional Tips:-
  • In step 3, u can taste the masala and If you feel like the taste is not as expected then add necessary ingredients to suit your taste and mix well. Marinate the chicken for at least 1/2 an hour.

Raw Banana Curry

Raw Banana Curry is a simple South Indian recipe which is best enjoyed with plain rice or chapatis. Raw Banana is a good source of fiber, vitamins and minerals.
Raw Banana Curry
Ingredients: Serve - 2
  • Raw banana – 2
  • Onion – 2 (big size)
  • Tomato- 2 (medium size)
  • Green chili  - 3
  • Ginger- Garlic paste – 1/2tspn
  • Mustard seeds – 1/2tspn
  • Urad dhal – 1/2tspn
  • Cumin seeds – 1/2tspn
  • Curry leaves – as required
  • Red chili powder – 1/2tspn(adjust to taste)
  • Turmeric powder – 1/4tspn
  • Coriander powder – 1/4tspn
  • Salt – 1 & 1/2 tspn (adjust to taste)
  • Water – ½ glass
  • Coriander leaves - as required

Method:
  1. Remove the skin and cut the raw banana as small pieces and transfer into bowl. Add 1/2 tspn salt & water to cover the banana pieces and keep aside. (figure 1)
  2. Take a pan, heat oil in medium flame, add mustard seeds and wait for crackle then add urad dhal,cumin seeds; saute for 1 minute. (figure 2)
  3. Add green chili paste, onions, 1 tspn salt, curry leaf and continue sauteing until onions become soft. (figure 3)
  4. Add tomatoes and saute until tomatoes are mashed. (figure 4)
  5. Add raw banana pieces saute for 2 minutes and then add red chili powder, turmeric powder, coriander powder continue sauteing for 3 minutes. (figure 5 & 6)
  6. Now add water and mix well. Close with lid and cook until raw banana gets cooked. Approximately 5- 8 minutes.(figure 7 & 8)
  7. After raw banana is cooked, open the lid and cook until curry gets thicker.
  8. Serve in a bowl. (figure 9)
Raw Banana Curry is ready to serve !

Additional Tips:-
  • In step1, apply oil for hands and cut the bananas. So that our hands won’t turns in black color.

Beetroot Halwa

Beetroot Halwa is an delicious Indian sweet recipe. It is very nutritious and healthy. Now a days, beetroot or carrot halwa has become trend in almost all birthday parties and family events.  Beetroot halwa is not as popular as carrot halwa but many people like it. I am sure people who doesn't like to eat beetroot much will definitely like this beetroot halwa. Just try it once and see.
Beetroot Halwa
Ingredients: Serve - 4
  • Fresh beetroots- shredded- 2cups
  • Milk- 1 & ½ cup
  • Sugar- 1cup
  • Ghee- 8tbspn
  • Cashew nuts - 10
  • Kishmish - 10
  • Cardamom powder – 1/2tspn

Method:
  1. First Wash, peel and grate the beetroots.
  2. Take a wide-mouthed vessel, heat 4tbspn ghee in medium flame. 
  3. Add grated beetroots and stir continuously until raw smell leaves. That means we will find a kind of sweet smell from beetroots. This process takes around 10 minutes.(figure 1 & 2)
  4. Add milk; mix well and boil them for 5 minutes.(figure 3)
  5. Now close with lid and cook for 10 to 15 minutes. On frequent intervals open the lid & stir the mixture well so that scorching can be prevented. (figure 4)
  6. Open the lid and continue stir until milk is completely evaporated in beetroot. (figure 5)
  7. Once the milk is completely evaporated then reduce the flame to low. Add sugar and mix well.(figure 6 )
  8. Once sugar is added, the mixture tends to liquefy. Stir well until mixture gets thick. This will take around 10 minutes.
  9. Mean while take a pan, heat 4tspn ghee add cashews, khismish, roast until its color changes to golden and switch off the flame. (figure 7)
  10. After the beetroot mixture in step 8 gets thick add roasted cashews, kishmish along with ghee. Add cardamom powder and mix them well.(figure 8)
  11. Serve the Beetroot Halwa with hot/ cold.(figure 9)
Delicious Beetroot Halwa is ready to serve !

Additional Tips:-
  • In step2, taking of wide-mouthed vessel the beetroots get cooked fast and uniform. This way you can save gas, time and energy.
