Curd Curry

Curd curry is a very famous recipe enjoyed best with plain rice & Paratha. Curd curry is made with butter milk and spices. Curd curry are made in various style like adding vegetables or urad dhal bonda onto the curry. Today lets see the preparation process for making curd Curry with urad dhal bonda. 

Curry Curd
 Ingredients: Serve - 4
  • Butter milk – 2 glass
  • Rice – 2tspn
  • Red gram – 1tspn
  • Urad dhal – 1 glass
  • Water – as reqiured
  • Onion – 2 (big size)
  • Tomato – 1(medium size)
  • Green chilly – 7
  • Ginger – small piece
  • Garlic – 6 pieces
  • Dry Coconut – small piece
  • Mustard seeds – 1/2tspn
  • Urad dhal – 1/2tspn
  • Curry leaf – as required
  • Coriander leaves – as required
  • Salt – 2tspn (adjust to taste)
  • Turmeric powder – 1/4tspn
  • Oil – 5tspn & deep frying

    Method:
    1. Wash and soak the urad dhal in water for 1 hour.
    2. Take pan, heat 1/2tspn oil in medium flame add rice, red gram and roast for 2 minutes. Keep it aside.(figure 1)
    3. Again heat 2tspn of oil in medium flame add 1onion, 5 green chili, ginger, garlic, dry coconut saute for 3 minutes. Then add tomatoes and continue sauteing until tomatoes become soft. Keep aside and let the mixture cool.(figure 2)
    4. In a mixer, add items prepared in step 2 & 3. Make a fine paste by adding little water. Keep aside (figure 3)
    5. In a mixer, add soaked urad dhal and grind them little softer by adding required water. (figure 4)
    6. Now transfer the urad dhal paste into big bowl add 1 onion thin slices, 2 green chili slices, Chopped curry leaves, coriander leaves, salt and mix well.(figure 5)
    7. Take a pan, heat 2tspn of oil in medium flame add mustard seeds wait for crackle and then add urad dhal, curry leaves, paste prepared in step 4, saute for 2minutes.(figure 6)
    8. Add turmeric powder, salt, 1/4 glass of water and well close with lid & cook for 10 minutes in low flame. (figure 7 & 8)
    9. Meanwhile take a pan, heat oil for deep frying. Take the paste which has been prepared in step 6, after heating oil add bonda's and fry until its color change to golden brown. Serve in a plate.(figure 9)
    10. Ensure mixture prepared in 8th step is cooled down after cooking for 10 minutes and then add butter milk and mix well. Add bonda's prepared in step 9.(figure 10 & 11)
    11. Garnish with coriander leaves and rest the curry for 30 minutes. Then serve in a bowl. (figure 12)
    Curd Curry is ready to serve !

    Additional Tips:-
    • In step 10, add butter milk to cooled mixture or else curry will spoil. 

    Aloo Paratha

    Aloo Paratha is one of the most popular breakfast recipe in North India. This recipe is made with wheat flour bread stuffed with aloo. It is very tasty when eaten with curd or pickle.

    Aloo Paratha

     Ingredients: Serve - 2
    • Wheat flour - 3 cups
    • Salt - 1 & 1/2tspn (adjust to taste)
    • Oil/ ghee - for making paratha
    • Water- as required
    • Aloo - 3
    • Red chili powder - 1tspn
    • Turmeric powder – 1/4tspn
    • Cumin powder - 1/2tspn
    • Cumin seeds  - 1/4tspn
    • Green chilies - 3
    • Coriander leaves - as required

    Method:
    1. Take a big bowl, add wheat flour, 1tspn salt, 1tspn oil and make soft dough with sufficient amount of water. 
    2. Keep the dough aside for 1 hour. Later make small balls of equal size. (figure 1)
    3. Cook the potatoes in pressure cooker for 3 vessel & let it cool down for some time. Later peel the potato skin and mash well. (figure 2 & 3)
    4. Add red chili powder, cumin powder, cumin seeds, green chili small pieces, 1/2tspn salt and mix well. (figure 4)
    5. Now make potato mash as small balls. (figure 5)
    6. Take one wheat ball, dump into dry wheat flour & make it like small thick circle. Place one potato mash ball at center of the circle. (figure 5)
    7. Fold the edges properly as shown in figure 6 & press this dumpling lightly so that it becomes a proper round shape.(figure 6 & 7)
    8. Dump the ball into wheat flour & with rolling pin gently roll the ball into little thick circle  Ensure that stuffing not coming out. (figure 8 & 9)
    9. Heat a pan in medium flame, put the paratha pan, apply  ghee/ oil and cook for 2 minute. (figure 10)
    10. Gently flip the paratha other side, apply oil/ghee and cook until paratha get's cooked well.(figure 11)
    11. Continue the same process for remaining Paratha’s
    12. Serve in plate with curd or pickle. (figure 12)
    Hot & Spicy Aloo Paratha is ready to serve !

    Additional Tips:-
    • In step 1, ensure that dough should be little tight.
    • In step 2, ensure that potato mash is not be watery.
    • In step 4, ensure potato mash balls are 1/3 of wheat ball size.

    Filter Coffee


    Filter coffee is one of the best refreshing hot drink I ever had. This beverage is made using coffee decoction and milk. Filter coffee is very popular in south India.

    Today let’s see how to prepare this filter coffee.

    Filter Coffee
     
    Ingredients: Serve - 8
    • Coffee powder – 10tspn
    • Water –5 glass
    • Sugar – as required
    • Milk    – as required
    • Coffee Filter

    Method:
    1. Take a bowl, add water and boil for 10 minutes in a medium flame.(figure 1)
    2. Take a coffee filter, add coffee powder, boiled water and close the lid immediately.(figure 2,3,4 & 5)
    3. Leave it until decoction is ready. It will takes 15 minutes.
    4. Take a glass, add required coffee decoction, hot milk , sugar and mix well. (figure 6, 7& 8)
    5. Serve in a coffee cup. (figure 9)
    Filter Coffee is ready to serve!

    Additional tips:-
    • In step2, close the lid immediately or else coffee smell will go out.
    • In step 4, we can do another process i.e take a bowl add sufficient coffee decoction, cold milk, sugar and boil for 5 minutes. Serve in a coffee cup.
    • As and when you need filter coffee then mix the decoction with milk until then keep them separately.

    Rice Flakes Mixture

    Rice flakes mixture is a very famous Maharashtra snack recipe. This recipe is made using crispy beaten rice flavored, peanuts and spices. Just try it out, I am sure you will definitely like it.  
    Rice Flakes Mixture
    Ingredients: Serve - 2
    • Rice flakes – 2 cups
    • Oil – 3tspn
    • Onion – 2
    • Tomato – 1
    • Green chilly – 1
    • Red chilly – 5
    • Cumin seeds – 1/2tspn
    • Salt – 1tspn (adjust to taste)
    • Coriander leaves – as required
    • Curry leaves – as required
    • Mixture -  ½ cup
    • Peanuts – 4tspn

     Method:
    1. Take a pan, heat oil in a medium flame, add rice flakes and roast until its color changes to golden brown. (figure 1)
    2. Take a pan, roast the peanuts until its color changes to brown in a medium flame.(figure 2)
    3. Add roasted peanuts into the rice flakes and saute for 2 minutes. (figure 3)
    4. In a mixer, add red chilies, cumin seeds, salt and make a soft powder. (figure 4,5 & 6)
    5. Chop the onions, tomato, green chili, curry leaves, coriander leaves like small pieces.(figure 7)
    6. Take a big bowl, add roasted rice flakes, roasted peanuts, mixture and mix well. (figure 8)
    7. Add sufficient red chilly powder which has been prepared in step 4.(figure 9)
    8. Add chopped onions, tomato, green chilly, curry leaves, coriander leaves and mix well with hand.(figure 10)
    9. Add lemon and mix well.(figure 11)
    10. Serve in a bowl.(figure 12)
    Spicy Rice Flakes Mixture is ready to serve! 

    Additional Tips:-
    • In step 6, we can add any type of ready made mixture available in market. It will add more taste to your recipe.
    • In step 8, mix the mixture with hand to ensure all species got mixed well.
