White Peas Brinjal curry & rice is always an excellent combo. White
peas also known as Navy Beans. A cup of peas has less than 100 calories but
lots of proteins, fiber, folic acid, iron, potassium and magnesium.

Ingredients: Serve-4
- Oil- 5tspn
- Onions – 2 (big size)
- Tomato – 2 (small size)
- Garlic – 6 pieces
- Curry leaf – a few
- Coriander leaves – few
- Brinjal – 5
- Drum stick – 2
- White Peas – 1 cup
- Mustard seeds – ½tspn
- Urad dhal – ½tspn
- Jeera – 1tspn
- Red chili powder – 2tspn
- Coriander powder – ½tspn
- Salt - 1 & 1/2tspn (adjust to taste)
- Turmeric powder – a pinch
- Coconut - small piece
- Tamarind juice – ½ cup

Method:
- First soak white peas in water over night.
- In a mixy jar add small piece coconut, 1/2tspn jeera and make a powder, keep aside.
- Take pressure cooker, heat oil in medium flame add mustard seeds wait for crackle and then add urad dhal,1/2tspn jeera, curry leafs. Saute for 3 seconds.(figure 1)
- Add onions, salt and saute until onions become soft.(figure 2)
- Add tomatoes and saute until tomatoes are smashed(figure 3)
- Now add vegetables, peas and saute for 3 more seconds.(figure 4)
- Add red chili powder, coriander powder, turmeric powder and saute for 1 more minute.(figure 5)
- Next add water and mix well. Close the lid with weight and cook for 2 vessels. (figure 6 & 7)
- Now open slowly, add tamarind juice and cook for 5 more minutes.(figure 8)
- Add 2tspn coconut-jeera powder which was prepared in step2 and cook for 2 more seconds.(figure 9)
- Garnish with coriander leaves and serve in a bowl. (figure 10)

Additional Tips:-
- In step 9 cook the curry only for 2 vessels or else vegetables will get smashed.
- Saute onions and tomatoes well.
- Soak the white peas at least 6 hours or overnight.
