Chiyali


Chiyali is made with idli. Some people would not like to eat idli as it is but they would prefer to have it when some spices are added to it. That's how we started creating kanchipuram idli and chiyali. Now lets see how to make chiyali. 
Chiyali
Ingredients: Serve- 2
  • Idli –8
  • Onion – 1 (big size)
  • Tomato – 1
  • Green chili – 4
  • Curry leaf – few
  • Coriander leaves - few
  • Turmeric powder – a pinch
  • Water – 1/2 glass
  • Mustard seeds – 1tspn
  • Urad  dhal - 1tspn
  • Channa dhal – 1tspn
  • Jeera – 1/2tspn
  • Oil – 3tspn
  • Salt - 1/2 tspn (adjust to taste)

 Method:
  1. First cut the idli into small cubes. Onions & tomatoes as thin slices and green chilly as length-wise.
  2. Take pan, heat oil in medium flame add mustard seeds wait for crackles and then add urad dhal, channa dhal, jeera. Saute for 3seconds.(figure 1)
  3. Now add  green chili, curry leafs, onions, salt and saute until onions become soft.(figure 2 & 3)
  4. Add turmeric powder, tomatoes and continue sauteing until tomatoes are smashed.(figure 4 & 5)
  5. Now add 1/2 glass of water and close the lid. Cook for 5 minutes in a medium flame. (figure 6 & 7)
  6. Now open the lid and saute the mixture. Mixture should be slightly water then add idli pieces mix well and saute for 3 more minutes.(figure 8)
  7. Garnish with coriander leaves and serve in bowl.(figure 9)
Additional Tips:-

  • In step 6, don't cook the gravy completely dry, it should be slightly water or else gravy will not stick to the idli. 

Carrot Rice


Carrot contains Vitamin A, which is good for eye sight and prevent cancer. Regular consumption of carrots reduce cholesterol level which helps prevent heart related problems. When we eat Carrot after meals it will clean our teeth, they act as natural abrasives that help in eliminating dirt and plague from the teeth.

Today let us learn how to make this simple carrot rice following our easy recipe.
Carrot Rice
Ingredients: Serve - 2
  • Carrot Grated - 2 (small)
  • Cooked Rice - 2 cups
  • Oil - 3 tspn
  • Mustared seeds - 1/2tspn
  • Urad dhal - 1/2 tspn
  • Channa dhal - 1tspn
  • Kaju - 4
  • Curry leaves - as required
  • Coriander leaves - as required
  • Turmeric powder - a pinch
  • Red chilly - 2
  • Salt - 1tspn (adjust to taste)

Method:
  1. First remove skin of the carrot and grate it.
  2. Take a pan, heat oil add mustared seeds and wait for crackle and then add urad dhal, channa dhal, red chillies, kaju, curry leafs, saute for 1minute.(figure 1 & 2)
  3. Add grated carrot and continue sauting for 1 more minute and then add turmeric powder, salt, saute for  2  more seconds.(figure 3, 4, & 5)
  4. Close with lid and cook for 10minutes in a medium flame or else cook until carrot gets cooked.(figure 6)
  5. Now add cooked rice and mix softly, saute for 1minute.(figure 7)
  6. Garnish with coriander leaves. (figure 8)
Carrot Rice is ready to serve !

Additional Tips:-
  • In step5, add cool rice and mix softly.

Kesari


Kesari is a popular South Indian sweet that is made of Rava. Kesari is one of the easiest sweets recipe which can be prepared in just 15 minutes. We usually make kesari for special occasions like birthday / anniversary.
Kesari
Ingredients: Serve- 4
  • Upma Rava - 1glass
  • water - 3 glass (use the rava measured glass)
  • Ghee- 1/2 cup
  • kaju - 10
  • kishmish - 10
  • Cardamom- 2
  • food color - 2 drops
  • sugar - 1 glass ( use the rava measured glass)

Method:
  1. Take a pan, heat 2tspn ghee in medium flame, roast 1 glass rava until color changes slightly brownish and immediately shift to a plate, keep aside.(figure 1 & 2)
  2. Take a pan, heat water and add sugar, food color, cardamom. Boil the water until bubbles come (figure 3, 4 & 5)
  3. Now add roasted rava and mix well. Close the lid and cook for 5min. After 5mins open the lid, check whether water is completely observed by rava if not then again close the lid and cook few more minutes until water is completely observed.(figure 6 & 7)
  4. Mean while take pan, heat remaining ghee and roast the nuts in golden color (figure 8)
  5. After rava is cooked, add roasted nuts along with ghee and mix well.(figure 9)
  6. That's it, hot and sweet Kesari is ready to serve ! (figure 10)

Additional Tips:- 
  • Roast the rava until its color changes slightly brownish and immediately shift to a plate. If you keep the rava in same pan then due to the pan heat, rava color gets changes. This will spoil the taste of our kesari. 
  • In step 3 mix the rava well without any lumps.
