Coconut Rice

Coconut rice is a popular traditional south Indian dish. Coconut rice can be made in various style like using grated coconut or using coconut milk and we have many more style. Today lets see the process involved in preparing coconut rice using grated coconut. Its a preferred option for lunch and light dinner. Okay, lets proceed to the steps
Coconut Rice
Ingredients: Serve -1
  • Coconut - 1 cup (grated)
  • Cooked Rice - 2 cups
  • Oil - 2tspn
  • Mustard seeds - 1/2tspn
  • Urad dhal - 1tspn
  • Channa dhal - 1tspn
  • Kaju - 4 pieces
  • Curry leaf - as required
  • Green chilly - 3
  • Ginger - small piece (optional)
  • Salt - 1tspn (adjust to taste)

 Method:
  1. First grate the coconut, ginger and cut the green chilly as lengthwise.
  2. Take a pan, heat oil in medium flame add mustard seeds, wait for crackle and then add urad dhal, Channa dhal, kaju, green chili, grated ginger, curry leaf & continue sauteing for 3 more seconds. (figure 1)
  3. Add grated coconut and saute for 1 minute. (figure 2)
  4. Add salt and continue sauteing for 2 more seconds (figure 3)
  5. Add cooked rice and saute for 2 minutes. (figure 4 & 5)
  6. Serve in a bowl. (figure 6)
Coconut Rice is ready to serve !

Additional Tips:-
  • In step 5, add cool rice or else rice will stick together will not come separate grains.

Karam Dosa

Karam Dosa is one of the most famous South Indian recipe were red chilli sauce is spread over the dosa. In general, people who prefers spicy food should definitely try this recipe.
Karam Dosa
Ingredients: Serve- 1
  • Dosa Batter - as required
  • Onion - 1 small size
  • Garlic - 3 pieces
  • Tamarind - small piece
  • Salt - 1/2tspn (adjust to taste)
  • Red chilli powder - 1tspn (adjust to taste)
  • Oil - as required
  • Ghee - as required

 Method:
  1. Take a mixy bowl add onion, garlic pieces, tamarind, salt, red chilli powder and make a smooth paste with very little water. (figure 1 & 2)
  2. Heat non stick dosa pan in medium flame, add 1 ladle of batter and spread it as thin dosa. (figure 3)
  3. Add oil on the top of dosa, spread the oil with dosa stick and cook for 2 seconds. (figure 4 & 5)
  4. Now add 1 & 1/2 tspn of karam paste which has been prepared in step 1 and spread over the dosa wait for 2 more seconds.(figure 6)
  5. Add 1 tspn of ghee on dosa and cook until dosa gets good texture.(figure 7)
  6. That's all remove the dosa and serve in plate.(figure 8 &9)
Spicy Karam Dosa is ready to serve !

Additional Tips:-

  • When dosa is cooked for one side then remove the dosa.
  • Just cook the dosa only one side and not on both sides.

Mutton Curry

I think we doesn't need much intro about mutton curry so I will directly take you to the preparation process. Please note Mutton provides 4 milligrams of iron, rich carbohydrates and fats which is great to warm you up from the inside out during the gloomy winter months.
Mutton Curry
Ingredients: Serve - 2
  • Mutton - 1/2 kg
  • Oil- 4tspn
  • Cloves -4
  • Cinnamon - 2 small inch
  • Fennel seeds - 1tspn
  • Onion - 3 (medium size)
  • Tomato - 2 (small size)
  • Red chili powder- 2tspn (adjust to taste)
  • Turmeric powder- a pinch
  • Coriander powder - 1/4tspn
  • Salt - 1 and 1/2spn (adjust to taste)
  • Water- 1/2 glass
  • Curry leafs - Few
  • Coriander leaves -Few
  • Ginger- 1 small piece
  • Garlic - 6 pieces
  • Green chili - 3

Method:
  1. Cut the mutton into medium size pieces, wash and keep aside
  2. In a mix jar add the items mentioned below, grind softly and keep aside.(figure 1)  a) ginger -1small piece  b) garlic-6 pieces  c) green chilly-3  d) onion-1  e) fennel seeds-1/2spn  f) cinnamon-1 small inch  g) cloves-2
  3. Cut the onions, tomatoes into thin slice and keep aside. 
  4. Take pressure cooker, heat 3spn oil in medium flame add 2 cloves,1 cinnamon, 1/2tspn fennel seeds and wait for crackle.(figure 2)
  5. Add onions and saute until onions become soft and then add grinned pasted which has been prepared in 2nd step and continue sauteing for 1 more minute. (figure 3)
  6. Add tomatoes and saute until tomatoes are smashed.(figure 4)
  7. Now add mutton pieces, salt, red chili powder, coriander powder, turmeric powder mix well and saute for 3 more minutes (figure5 & 6)
  8. Add 1/2 glass of water mix well and taste the water. If you feel like the taste is not as expected then add necessary ingredients to suit your taste and mix well.(figure 7)
  9. Close the pressure cooker with lid, put weight and cook for 4 vessels in medium flame.(figure 8)
  10. Finally serve in bowl and garnish with coriander leaves.(figure 9)
Mutton curry is ready to serve !

Additional Tips:-
  • Grind the paste explained in 2nd step very smoothly
  • Cook the curry at-least 4 vessels and check whether mutton is cooked well if not then cook for one more vessel.

Mango Rice

Hope every one like mango and more over we are in current season to taste Kesar mango varieties.Our today's recipe is green mango rice which is very easy to make and good option for lunch box meal.
Mango Rice
Ingredients: Serve -2
  • Green Mango - 1 cup (grated)
  • Cooked Rice - 3 cups
  • Oil - 2tspn
  • Mustard seeds - 1/2tspn
  • Urad dhal - 1tspn
  • Channa dhal - 1tspn
  • Kaju - 4 pieces
  • Curry leaf - as required
  • Coriander leaves - as required
  • Green chili - 3
  • Salt - 1tspn (adjust to taste)

Method:
  1. First grate the mango and cut the green chili as lengthwise.
  2. Take a pan, heat oil in medium flame add mustered seeds and wait for crackle and then add urad dhal, Channa dhal, kaju, green chili, curry leaf & continue sauteing for 5 seconds.(figure 1)
  3. Add grated Mango and saute for 1 minute. (figure 2)
  4. Add salt and saute for 5 more seconds . (figure 3)
  5. Add cooked rice mix softly and continue sauteing for 1 minute. (figure 4 )
  6. Garnish with coriander leaves and serve in a bowl. (figure 5 & 6) 
Mango rice is ready to serve !

Additional Tips:-
  • In step 3, add cool rice or else rice will stick together won't come separate grains. 

Tomato Bath

Tomato bath is nothing but our usual upma with a lot of tomatoes and rava. It makes great combo with coconut chutney / peanuts chutney.

Tomato Bath
Ingredients: Serve - 2
  • Upma rava - 1 cup
  • Water - 3 & 1/4 cup (use rava measured cup)
  • Tomatoes - 3 (medium size)
  • Onion - 1 (medium size)
  • Green chilli - 4
  • Ginger - small piece
  • Curry leaf - as required
  • Oil / ghee - 8tspn
  • Mustard seeds - 1/2tspn
  • Urad dhal - 1/2tspn
  • Channa dhal - 1tspn
  • Fennel seeds - 1/4tspn
  • Cloves - 3
  • Cinnamom - small inch
  • Kaju - 5
  • Turmeric powder - a pinch
  • Salt - 1tspn

Method:
  1. Take a pan heat 2 tspn of ghee in medium flame and roast 1 cup of rava until golden brown.(figure 1)
  2. Take a pan heat remaining ghee add mustard seeds and wait for crackle and then add urad dhal, Channa dhal, kaju, green chilies, ginger, curry leafs and continue sauteing for 3 more seconds. (figure 2)
  3. Add onion, salt and saute until onion become soft. (figure 3)
  4. Add tomatoes, turmeric powder and saute until tomatoes become soft. (figure 4)
  5. Add 3 & 1/4 cup of water and close with lid and cook for 5 minutes or until bubbles come. (figure 5 & 6)
  6. Next add rava and mix continuously and close with lid & cook for 3 - 5 minutes. (figure 7 &  8)
  7. Open the lid and cook for other 2 seconds & serve in a bowl. (figure 9)
Yummy Tomato Bath is ready to serve !

Additional Tips:-
  • Roast the rava in golden brown.
  • In step 6, cook the upma for at least 5 minutes.

Prawn Fry



Prawns (Shrimps) are great supplier of proteins, calories and its low fat nature makes them a healthy food. It also helps us to control bad cholesterol and heart attacks. Today we will see the process of making crispy prawn fry.
Prawn Fry
   Ingredients: Serve - 2
  • Prawn - 1/2 kg
  • Oil - 5tspn
  • Fennel seeds - 1/2tspn
  • Cloves - 5
  • Cinnamon - 4 small inch
  • Ginger - small piece
  • Garlic - 8 pieces
  • green chilies - 5
  • Turmeric powder - a pinch
  • Red chilli powder - 1/2tspn(adjust to taste)
  • Coriander powder - 1/4tspn
  • Onion - 1(small)
  • Tomato - 1(small)
  • Food color - 1 drop
  • Curry leaf - as required
  • Coriander leaves as required
  • Salt - 1tspn(adjust to taste)

Method:
  1. In a mixy jar add fennel seeds, 3 cloves, 2 small inch cinnamon, ginger, garlic, 3 green chili, onion, tomato and make a fine paste. ( figure 1 & 2) 
  2. Clean the prawn and cook in a bowl by adding pinch of turmeric powder for 5-8 minutes in medium flame. (figure 3)
  3. Take a pan, heat oil in medium flame add 2 cloves, 2 small inch cinnamon, 2 green chilli, curry leaf, grind paste which has been prepared in 1st step and continue sauteing for 5minutes. ( figure 4, 5 & 6)
  4. Add prawn, salt and saute for 1 minute. (figure 7 & 8)
  5. Add red chilli powder, turmeric powder, coriander powder, and continue sauteing for 3 more minute. (figure 9, 10 & 11)
  6. Add little water, drop of food color & close with lid and cook until prawn gets cooked.(figure 12,13 & 14)
  7. Open the lid and continue sauteing until prawn gets crispy.
  8. Garnish with coriander leaves. (figure 15)
Crispy Prawn fry is ready to serve !

Additional Tips:-
  • Cook the prawn in bowl for at least 5 minutes to get rid of raw smell and in this 5 minutes prawn will get half cooked.
